Buff cutlets, chicken varthuracha, appams, idiyappam, buff roast. Enough said. Lip smacking good and vetted as authentic by malayalees. Just one nit. Cut down the oil. Nobody needs half an inch of oil atop every curry consistently. The image shows the chicken curry after nearly a half cup of oil was taken from the top.
